Cincinnati Chili
Traditional red chili often includes cumin, paprika, garlic powder, and onion powder, though it's not limited to these spices. Cincinnati chili, on the other hand, has a sweet edge with Mediterranean spices like cinnamon, cloves, allspice, and cocoa powder. Cincinnati chili is all about warm winter baking spices which makes it a perfect dish for any cold and dreary day.
Ingredients
1/2 yellow onion, chopped
1/2 green bell pepper, chopped
1 clove garlic, minced
1 (15-oz) can low-sodium tomato sauce
2 teaspoons apple cider vinegar
1 (15 oz) can low-sodium dark red kidney beans
3 tablespoons chili powder
1/2 teaspoon ground cumin, toasted
2 teaspoons cocoa powder
1 teaspoon ground cinnamon
1/8 teaspoon ground allspice
1/8 teaspoon ground cloves
1/2 leaf Bay leaf
3 oz Protein plus macaroni noodles by Barilla
Directions
At Home:
In a stockpot over medium heat, cook onions, bell peppers, and garlic, stirring occasionally, until onions start to turn translucent, 3 to 4 minutes. Add water 1 to 2 tablespoons at a time as needed, to keep vegetables from sticking.
Add tomato sauce, kidney beans, chili powder, apple cider vinegar, cocoa powder, ground allspice, ground cloves, bay leaf and cinnamon. Increase heat to high and bring to a boil. Reduce heat to low and simmer, covered, until flavors have melded, 10 minutes.
Meanwhile, cook macaroni noodles according to package instructions stopping short of becoming al dente. Drain well in a colander.
Combine macaroni with with chili and remove all water using a freeze dryer of food dehydrator and divide into two servings. Seal each serving in appropriate packaging with an oxygen absorber for freeze drying or vacuum pack if using a food dehydrator.
At Camp:
Place the chili mix in a medium pot. Add approximately 1-1/8 cups of water. Cover, bring to a boil stirring frequently. Cook until rehydrated. Allow to finish cooking in an insulated cozy if more time is needed.
