Senegalese Peanut Stew
Mafe (or Maafe) is a popular African peanut stew made in a spicy, creamy peanut and tomato sauce. Many different variations of peanut butter stew are eaten in various West African countries. In the Gambia, peanut stew is made with squash or sweet potatoes and is known as Domoda. In Nigeria, it is called Groundnut Stew and is usually eaten with fufu or rice.This is one mouthwatering and appetizing dish you would not be able to get enough of!
Ingredients
1/3 cup brown rice, medium grain, uncooked
1 medium yellow onion, chopped
3 cloves garlic, minced
2 teaspoons ginger, freshly. grated
3 cups vegetable broth
1/2 teaspoon ground cumin, toasted
1/4 teaspoon crushed red pepper
2 tablespoon tomato paste
1 sweet potato, peeled and diced
2 medium carrots, diced
7.5 oz canned Garbanzo beans, drained
3 tablespoons peanut butter
4 oz swiss chard, raw
1 tablespoon chopped peanuts
Directions
At Home:
In a stockpot over high heat, bring rice and 2/3 cup water to a boil. Reduce heat to low, cover, and simmer for 45 minutes. Remove from heat and let cool; fluff rice with a fork.
Set pressure cooker to sauté setting. Add onions, garlic, and ginger. Cook, stirring occasionally, for 2 to 3 minutes. Add vegetable broth 1 to 2 tablespoons at a time as needed, to keep vegetables from sticking.
Add cumin and pepper flakes; cook until fragrant, about 1 minute. Stir in tomato paste and cook for 1 minute more.
Add remaining broth, sweet potatoes, carrots, chickpeas, and peanut butter to pressure cooker. Lock lid in place. Set cooker to high-pressure and cook for 5 minutes. Quick-release pressure.
Switch pressure cooker to sauté setting. Stir in Swiss chard. Cook until chard has wilted, 5 minutes.
Combine rice with with bean mixture and remove all water using a freeze dryer of food dehydrator and divide into two servings. Seal each serving in appropriate packaging with an oxygen absorber for freeze drying or vacuum pack if using a food dehydrator.
At Camp:
Place the peanut stew in a medium pot. Add slightly less than 2-1/2 cups of water. Cover, bring to a boil stirring frequently. Cook until rehydrated. Allow to finish cooking in an insulated cozy if more time is needed.
